Weekend and New Recipes

Once again, we packed up and headed to the LBK for the weekend to enjoy the Tech game with one of my high school friends and her hubby. We usually get season tickets every year, but we thought this year would be a little more difficult with a baby, especially since the games are long. It seems like we are always going some where, but rarely is it for something that is for just the three of us... so it was a much needed trip!!!

We spent Friday night at my sis and BIL's house and hung out with them most of the day Saturday as they were redecorating Megan's room (which turned out pretty cute!) My sister made her valance!

Then we headed over to Becca and Jimmy's house to cookout and watch the game. Becca is one of those good friends that no matter how long it has been since you have seen them, you can always pick up where you left off! Needless to say, we had a great time and ended up staying up talking until 2 a.m.!!!!

Of course the boys didn't last and both feel asleep. ha! They also have one of the cutest little girls! So sweet! I can't wait until Madeline is that old! We had a good time and ate WAY TOO much! Sunday we ran a few errands in Lubbock and headed home!

Lately I have tried a few new recipes for Madeline lately and decided to try one for dinner tonight. If you are interested in making homemade baby food, this is a good resource that has lots of helpful tips and recipes! I made the Apple Turkey Loaf and the Broccoli & Cheddar Cheese nuggets last week for Madeline and she loved them! I think they will be good recipes for toddlerhood as well and even let you sneak in vegetables for those picky eaters!! Tonight I made her some Sweet Potato Pancakes. Mike and I both tried them and think we like them better than regular pancakes and are pretty tasty without syrup!! I also made this new recipe for dinner tonight and it turned our pretty good!



Applesauce Barbecue Chicken Recipe


  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 2/3 cup chunky applesauce
  • 2/3 cup spicy barbecue sauce *I used Stubbs since that is what I had on hand
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder

Directions

  • Sprinkle chicken with pepper. In a large skillet, brown chicken in oil on both sides. In a small bowl, combine the remaining ingredients; pour over chicken. Cover and cook 7-10 minutes longer or until a meat thermometer reads 170°. Yield: 4 servings.

Spaghetti and Meat Sauce = Big Mess

Last night I made Madeline spaghetti and meat sauce with a side of spinach.

All nice and clean.....eating it with a spoon.....




but that didn't last long! Sometimes she doesn't want to be fed and is
little miss independent.



So she spits out what we gave her and proceeds to feed herself! Little Turkey!!!




No worries...it all washed off! :)



Lawnmowers and Trampolines

This past weekend we loaded up and headed to the panhandle. Our first stop was in Lubbock to see my sister, BIL and sweet niece. After the long 2 1/2 hour drive, we unloaded and headed to dinner. My good friend Karlee (who actually introduced me to Mike) met up with us and hung out for a while.

Saturday we headed to P-ville to celebrate my mother's birthday! The weather was very nice and we spent most of our time outside. That is definitely one thing I miss about the panhandle....little humidity and cooler weather.

With the weather being so nice, my dad decided he needed to take Madeline on her first ride on the lawnmower. Gotta put your John Deere cap on! haha!

They were just cruising around...not actually mowing the lawn! She liked it until the end then she fussed a little.

I think she thought she was such a big girl....Gramps let her steer.


Then it was time for the trampoline. That poor trampoline was around when Jenna and I were little... so like 20+ years and we got it from someone else! haha

We had a pretty good weekend and it was nice to see my family. I just wish it wasn't such a long drive!!

New Car


If you haven't noticed lately, we have a big girl on our hands. The exersaucer, swing and baby toys are things of the past. Madeline has discovered the toy section!!

She is the proud owner of two new Tonka trucks

and a Step Start Walk N' Ride.

She was anxious to put it together.





She has also discovered that she can crawl under the daybed in her room! ha!
